This is in agreement with many ancient writings. Never bring water to boiling point for making tea, although I think it is not wise when the water is not so safe, such as in China or India. For us in HK, I agree with Leo to use a good water filter for better purity and a kettle I can set temperature to 90C. I think you can do the same in US or UK or wherever you are, because although the water after processing is clean, the pipes or water tank or whatever between the water processing plant and your tap may not be 100% ideal.

I do not quite understand why people buy this kind of tea cakes. One of my uncles serves this whenever we go there for dinner. It is so difficult just to get a crumb for making tea with. He always talks about how price goes up with my father and how expensive the tea we drink now, and raw cake and cooked cake and this mountain and that tree etc etc etc. I don’t think I even like the taste. The thing looks so dirty wrapped in the old rice paper and taken out so many times to be grabbed at forcefully and mutilated and put back there sitting in the shelf.  8-X

I think they have it in Ming Cha, and very expensive. I think over 300 HKD.

It’s nice to have a home where you can put decorations here and there. Ours is always too crowded to do that. Maybe for that reason, I have never wanted to own any puer cakes, although many friends talked about the rise in price and all that.

I think this really is a very interesting question, too. Adding lemon into tea is very different from drinking tea after eating lemon, that I can say because of a lot my own experience. Lemon tea is popular in my home Hong Kong, and I love eating lemon with skin just for the extreme taste excitement. I would not drink tea afterwards  :-&

I am so sorry, I did not know they would charge so much. As I said I have only bought from them in real stores, not internet shop. Too bad Leo’s internet shop is not selling this Lychee tea, because I know their delivery charge is very low. I hope you can find the tea eventually. BTW, I have not bought this tea since I discovered that some Phoenix oolongs have similar sweet fruity smell but natural and much better tasting tea liquid. For example, Milan Xiang that I bought from Leo’s shop. Perhaps you can give it a try too.

Silver needle is okay to be in the teapot for long time too.
