      Hi,

      Beginning April I will be in Hong Kong where can I follow a tea course. I would to learn 倒茶. And how to make a good milk tea HK style, yinyeung, maybe bubble tea. I speak English Cantonees and Mandarin. Private lesson is also possible. I have followed a tea sommelier class in Holland. I have some knowledge about tea. End of May I would like to participate the Dutch tea championship.

      I think it is taught only by experienced tea makers to new employees in those Hong Kong style cafes. Perhaps in a class or two in the VTC Culinary School. There seems to be no open classes for it. Basically it is a lot of practice anyway. The principal is quite simple: make the tea very strong by repeated brewing. Here is a video:
