The difference between having preheated the teapot and not is now obvious to me. I just read again the article about infusion basic techniques and found the sandwich technique very interesting. I am wondering instead of restricting to infusing green tea, can this be used in other teas? I’d think it is rather like preheating the teapot and using the same hot water for infusion. Wouldn’t that make tea a lot easier?
The central idea in the sandwich technique is what you have described: preheating the pot and beginning to infuse the tea in one go. Most definitely you can infuse any tea with it, other than those that have to be blanched first. There is also room for play in how you drop the leaves, when to add the second half of water and at what temperature. Have fun!
