I want to make a strong, but good tasting black tea with lemon, ginger and a sweetener in it, any recommendation for a tea and the sweetener?
use any good machine made broken grade. ginger and lemon too strong will destroy good taste of better tea. keemun grade 1 is good enough for mixing with other things. i use this for milk, sugar or lemon. for own drinking, do not use white sugar, bad after taste
I’ll try that. Thanks. I think I’ll try raw sugar sugar again, last time it was really too dominating.
If you want good sweetness but not extra tastes to distract the tea, use white crystal sugar, the next best is rock sugar, like those that we have in our grocery stores in HK, if you are familiar with this place. Grind the chunk a bit before trying to dissolve it. Or use low fire to dissolve it, but not over cook to brown. I have written a bit about it in the ice tea special feature.
The sugar suggestion is great. This is the first time I have a sweetened tea without the bad aftertaste, and the taste of the tea can be strong without the bitterness. I used the white crystal. I used and Assam FOP this time, but I think any tea can be fine. Will try again. Thank you!
