I go on and off brewing my own kombucha at home. I don’t do it currently because it’s a pain to keep the culture alive by constantly brewing it. I end up with much more than I can drink. I like to use green or white tea and brew the same way I make most green and white teas – with maybe 50 C water, brewed for four minutes (1 tsp tea per cup of water.) Then I add brown sugar, let cool, and place the fungus in with the tea into a glass container. I cover it with paper towel and rubber bands, and let ferment for about 2 weeks. As it brews it gets less sweet, more vinegary. The result is a lightly effervescent, slightly alcoholic drink that is living (probiotic,) and tastes like a slightly sweet, slightly sour brew that has a tang to it. It is mainly a digestive tonic for me.

    Add:

    Orchid Gratus 2011
    White Peony Classic Long

And one more that is a pre-release tea so I won’t say anything about it just yet!

    🙂

Also, they have seams. I wonder if they are really airtight? I am concerned they are cheap quality. I just wiped the inside and noticed a speck of metal on the paper towel I was wiping with! At least they look nice.

    They are like these:
I just blew into them covering my mouth around the opening. A lot of air went right through the container. These are not air tight at all! 🙁
What should I use to store my tea then?

Thanks Leo. Maybe I should avoid drinking Kukicha, since it is made with twigs.

I don’t know if it was flavored or not but I am looking for a kind that is naturally buttery without added flavor.

    It is this:

It’s the first pu-erh I have tried that I enjoy. Of course, I am quite new to fine tea so I don’t know much about pu erh. I just took a chance and bought it.

I saw an acupuncturist and they told me I had liver qi stagnation and also recommended an anti-inflammatory diet and prescribed herbs. Green tea was on the list of GOOD things to have. I now believe it is a dairy allergy. However, maybe check out this article (which I believe is focusing on the effects of black tea.)

On the other hand, green tea seems to have the opposite effect.

I think these dosages are well tolerated usually but I understand it can be hard on the liver, so you may need to be monitored through blood tests. Therapeutic doses of niacin are much higher than recommended daily allowances.

2 pills, twice a day of red yeast rice. That’s 2400mg. I use Whole Foods brand currently but am searching for a cheaper brand that is still effective and pure. Red Yeast rice is often contaminated with citrinin, a kidney toxin. I took a cheaper brand before and couldn’t tolerate the full dose because it gave me headaches. Plus, the amount of statins in red yeast rice varies widely. So high quality red yeast rice is important. I take 1000mg of Niacin, at night. It makes me flush, but I am okay with that. The brand I use is Twinlabs. It’s important to take the quick release niacin and not the slow release, as this can be harmful for the liver. Also, flush-free niacin doesn’t work. The flushing is part of the cholesterol lowering action.
