From my experience the quicker the pour the better for phoenix, and so it seems that gaiwans are better suited for finer phoenic teas. However the Chouzhou teapots would seem to hold heat better.
Any opinions?
Would you choose to time your infusions accordion to the end of the pour with Chouzhou/yixing teapots ?
Any thoughts most welcome!
always only gaiwan for me! no need to time. only feeling it is right.
Try not to use the Chouzhou teapot. I’d say 99% of those available in the market are of questionable materials. If you want to use a teapot to prepare Phoenix oolong, use either a porcelain or a genuine Yixing. Teapots are better when longer infusion time is preferred.

Shame to hear about Chouzhou teapot quality- I haven’t bought one but the thinness of the pot seemed to be a good match for Phoenix teas.
This makes me wonder though- if the clay in this area is like this, what about the soil the Phoenix tea plants grow in? How can we ensure we find Phoenix teas that come from well tended Old Growth trees and not from pesticide using tea gardens?
I have never seen a phoenix tea labelled as organic… And of course we have to trust our tea merchants, but really… How can we know?
I am not sure if this is related to this discussion, but I have used ordinary china teapot for Phoenix oolong and the taste is absolutely wonderful to me. I have tried the gaiwan but it has never been as good as the china teapot.
